Meatballs in Cream Tomato Sauce




What you need:

For the Meatballs:
  • 500g mince
  • 3 tbsp fine coconut
  • 1 egg
  • 1/4 cup full cream milk
  • 2 tbsp sugar substitute
  • 1 tbsp curry powder
  • 1 tsp turmeric powder
  • 1 mall onion diced fine.
  1. Mix all the ingredients together and form into balls.
 

    For the bake:

    • Meatballs per above
    • 150ml heavy cream
    • 50g fresh parsley
    • 1 tbsp tomato paste
    • salt and pepper
    1. Mix the cream and tomato paste together. Season with sal and pepper.
    2. Heat oil in a frying pan. Fry the meatballs until nice and brown. Place in a heatproof bowl. Pour the sauce over the top and bake in a preheated oven of 180C for 20 minutes until the meatballs are cooked through and the sauce becomes nice and thick.
    3. Top with parsley before serving.
